Resi is a traditional Cypriot dish is usually offered to the guests during the dinner following a wedding,
mainly in the areas of Paphos and Limassol.
It is a tradition which has been kept over the years and which still exists today.
Resi is made of wheat which is cooked in chicken stock similar to pilaf.
Then the lamb, goat or chicken is cooked until everything is soft.
The bones are removed from the meat and then the meat is mixed with the wheat.
