When the Epsima is cooked and boiled, washed wheat is thrown in the pot with it.
It is left to cook well, without being stirred. It is then stored into sweets bottes and can be maintained for up to two years if it kept well. Some women place grounded sesame in the portos while it is still being cooked.
Lastly, portos with epsima is considered to be a type of grape sweet.
