Zalatina is a traditional Cypriot delicacy which is quite popular on the island.
During the older years the residents in villages would raise a pig in order to eat during Christmas.
They ate as much as they could but needed a way to maintain the rest of it, therefore they made sausages, lountza or zalatina.
Zalatina is made of pork meat, usually the head and the feet.
Firstly the pork pieces are boiled, then salt, black pepper pieces of red hot pepper, rosemary, vinegar, and lemon juice are added.
